I have always loved stuffed peppers, and always enjoy breakfast, so I had a crazy idea of doing breakfast stuffed green peppers. First I sliced the peppers in half and cleaned. Next whip some eggs up like you would if you make scrambled eggs. Spoon the egg into each pepper, then add whatever meat you like, these had diced ham. I added some onion, white queso dip, and then topped with shredded cheese, garlic salt, and cracked pepper. Fillings could be whatever your favorite is, I just thought of omelet ingredients. Smoked for about an hour at 275 degrees. I only got one pic, everyone was so hungry Sunday morning when I brought them in, they disappeared quickly. These are definitely going to be made again.

I like the looks of that. After the hour in the smoker, what was the consistency of the eggs, and was the green pepper tender?

It would be simple enough to blanch the pepper if it's warranted. I'm making a frittata on my BGE tonight in a cast iron skillet and it takes about 25 minutes to fully cook.
 
The pepper is cooked but not mushy. The egg is also done, usually shoot for about 180 IT
 
Interesting concept! I'm not a fan of meat stuffed peppers, bet peppers and Eggs I eat regularly. Thes look good...JJ
 
Looks great. One question, how do you keep the pepper level with the raw egg in it on the grill?

When the bell peppers come out of the garden I will try it later this year.
My garden bells are much better for holding up to cooking than store bought produce.
What is your cooking or smoking platform?

If they sit too unlevel, I try and slightly trim the bottom of the pepper to level out, trick is not getting too deep of a cut and creating a hole. I have tried leaning them against a neighboring pepper that sits level
