Hi folks,

I'm Mark, and I have just started my first attempt at smoking after lurking a bit here.  I'm from Michigan, and I was gifted a 30 year old never-been-used Little Chef smoker that most resembles:


That being said, I'm going to head over to the Chicken section and tell you folks what I'm doing, and hopefully the helpful lot of you will help me not screw this up too bad!

Sorry to post it here but I'm too new to post anywhere else yet :)

Any quick ways to add temperature to an el-cheapo electric smoker?  At first thought it sounds impossible.  The element is what it is, right?

Mark, actually it is easy to add temp control to the electric smoker. I would just us the controller I built for sous vide cooking. About $50-60 for the components.

I keep thinking of making a tutorial for one of the sous vide forums and the same one would work for here.

The one I'm building for my propane smoker is still gathering parts, about a month should see that one go into testing.
