what's up everyone. my name is Mike and I today I have just begun my first endeavor into the world of smoking. I have 2 door masterbuilt and I'm looking forward to using this bad boy on the regular. I live in Texas but hail from Allentown pa. I'm active duty in the air force and am stationed down here at sheppard afb in Wichita Falls. Right now as we speak I have 2 racks of ribs smoking and I'm attempting the 3-2-1 method. I'm gonna throw on some chicken brined chicken breasts at the tail end as well. this is something I've always wanted to get into and I'm looking forward to soaking up your knowledge. I've attached a picture of my smoker too. once again hello, and nice to meet you all.

Hey Mike, welcome to SMF!  Lots of folks here with your type smoker so any question you have someone will have an opinion.  Sounds like you have quite a meal lined up there with ribs and chicken.  BTW, thank you for your service and the sacrifices that come with it.
