I got a rack of pork spare ribs about 5.3 lbs what is the best temp and how long would u all recommended time wise!! I got it on 230 right now laying in the rack pulled the membrane did a dry salt brine in the fridge for bout 2 hrs and put a BBQ Rub Mixed with a little mustard for a sticking agent??? I am curious did I do everything right I am open to all tips and opinions!!

Sorry we are a little late getting here.

How did the ribs turn out?

There are hundreds of ways to smoke ribs & each one of us has their own personal way of doing them.

The best way to start out is with the 3-2-1 method.

That's 3 hours on the grate, 2 hours in foil with some liquid, & then 1 hour back on the grate.

Also, would you swing by "Roll Call" & introduce yourself, so we can all welcome you to SMF!

321 questions we use a electric masterbuilt 40 smoker with a water pan /drip pan. What I confused about is when to put water in pan and when to leave it empty. I did ribs and had water in it with 10% apple vinegar the whole time. I am thinking I need to keep the vent on top open fully unless smoking is venting?

I have the same smoker.  I put water in the pan from the start.  I do not use it as a drip pan.  I put a foil pan on the rack above the drip.  I only slightly open the vent.  I cook everything at 275 and I haven't ruined anything yet
