Bottom Round Roast Beef

Ok y'all, after that last cook with the arm roast I was at the store and they had a bottom round. Well today is the day. Trimmed it up, squared it, seasoned SPPOG, injected with beef stock, have a pan made up for Au Jus, smoking on my verticle charcoal smoker, using pecan off my pecan tree seasoned 2 yrs. Have the Smoker fired up. Cooking to IT 120-130

Pulled from smoker IT 121 in center. Smells amazing. Have it resting. Will show final results.

Final product turned out good. I am Amazed at how tender it is. Glad I got my first bottom round done. After cutting, and snacking, and two sandwiches we have 4 lbs of roast beef sliced and in the fridge. I will be doing a brisket soon. But I will definitely do this cut again.

Turned out different then my last one. Even though IT temp read lower it is definitely cooked more
Looks to me like you have different muscle groups going on there .
Was that cryovac'd or in a butchers tray ? I'm thinking the section that's medium rare should be trimmed out into it's own roast .

Yours looks great , and I bet it tasted the same . I also agree with edmonds edmonds .

This is a bottom round flat before trimming into roasts . You can see the different muscle groups . As it gets smaller , so do the muscles . This was broke down into 2 roast and some trim .

I really appreciate your help with it. Like I mentioned earlier, this is my first one. The other I did was an arm roast. I didn’t even think about the different muscle groups. Just figured a bottom round is a bottom round lol

The sandwich was amazing for sure. Specially with my canned jalapeños on it. I‘m definitely digging doing my own deli meat.
