Smoking a 7 pound Boston tomorrow. I’m excited to use my new controller and billows fan on my WSM. Not that you need precise control for pulled pork but on Sunday I’m doing a brisket and want to try the fan and controller before I do the brisket.

here is a picture of it all rubbed up!

I’m going to use Apple wood chunks and kingsford original charcoal with water in the water pan.

Well the weather dudes were right. Rain. I had to set up the pop up as it was raining pretty hard. Nice to be able to stay dry once I got it up.

I’m struggling a little with the billows fan as temp keeps running up some. The fan continuously runs. I would assume it shuts off or is it continuously variable? For now I’m managing old school. Their support line opens in a few and I’ll see what they know.
The rub smelled great this morning.

Well I’m waiting to hit 160 to wrap. Got the fan figured out. I should have read or kept the instructions. Here’s the new toys in action.

all is well that ends well. Messed around with the controller and fan some. It seemed to work well but stuck on once which sent the temp way up. I was running it a little hotter to start with. I don’t think it caused a problem and I’m guessing all the fighting I was doing with it was the cause. Once I left it alone it finished right on the temp I had programmed in.

forgot to mention the rub was great.
