Today was a huge day at the CivilSmoker household….. after many years the X-Fire is in place ready to breath fire again!!!
IMG_4324.jpeg

A chimney of coals in place and ready to fire….
IMG_4326.jpeg

Where there is smoke, fire will soon follow……
IMG_4327.jpeg

Oh man the flames have sparked……
IMG_4328.jpeg

…..the flames are getting stronger!!!!!
IMG_4330.jpeg

The flames are ALIVE….. the heart beat of the X-Fire LIVES!!!! @Brokenhandle these next few pics are for you!!!
IMG_4332.jpeg

The fire is warmth, the fire is beauty, the fire is BBQ life!
IMG_4333.jpeg

Preparing the grates for searing…..
IMG_4334.jpeg

They dance with purpose!!
IMG_4335.jpeg

They move with mystic purpose…..
IMG_4336.jpeg

The grates embrace the flames as a partner of love!
IMG_4340.jpeg

The Fire Walz has its audience on their seats!
IMG_4341.jpeg

This one speaks to me…. It’s time to flame sear!!!!!!!
IMG_4342.jpeg

Some seasoned up bone in NYs sale priced at 10.99/lb…..
IMG_4331.jpeg

It’s sizzle time……this brings tears to my eyes!!!
IMG_4344.jpeg

Magic in the making!
IMG_4345.jpeg

Rotating to build the connection lie and depth of flavor!
IMG_4348.jpeg

Lowered them down to get the final touches….
IMG_4351.jpeg

Nothing but happy smiles as they rest….INT 128 ish….
IMG_4356.jpeg

Just a shot of the split baby shrooms the boy seared up!
IMG_4357.jpeg

And for all the effort, just a simple meat and a fresh Idaho baker….with a light drizzle of a balsamic reduction…..
IMG_4358.jpeg

The X-Fire delivered a meal and memory!
IMG_4359.jpeg

A very satisfying and fulfilling first bite!!
IMG_4360.jpeg

Thanks for indulging my obsession!!

Looks excellent.

Bone-in Nys are definitely better than boneless in my book. Just don't see them very often.
