Blue smoke white smoke?

OK I posted this 2 or 3 was ago in the cold smoking section . I understand from reading here. Blue is good. What makes it blue?? What makes it white. I have a cedar cold smoker 2nd 6th tall. Smoke is piped in.running at 70deg. Right where I want it. Thanks for lookin.
 
Thank you Eric. I guess I'm in the second catagory. I been smoking for over 20 yrs. Can't remember ever saying boy this taste like sheet think I'll throw it out. Blue smoke or white smoke I'm Killin the hog Thurs this wk. This will be the first time running the cold smoker. On a side note can I use the same cure recipe for the hog jowl as the bacon .

I'd say use what you know works, from smoke methods to cure recipe. If you like the taste of the meat and smoke, your curing method/recipe must be working...if you don't want to change that, then stick to your guns. Anything else at that point becomes an experiment.
