I ordered this in a very groovy place here in Sydney called Bodega 1904 we just opened in a new residential precinct 10 minutes away. It was a racetrack & light industrial that was converted to a whole new suburb. The old tram sheds ( think light rail cars) was kept intact  outside but gutted to take a bunch of restaurants, supermarket,pub,cafe,medical centre ,gym.

This is 60% pigs blood,40 % pigs head meat .Spanish flavours ,salsa verde ,yoghurt . It was really something. I also had a smoked pigs head sausage that was just brilliant .Heads come in in 6 packs heavily salted ,left for a few days .Cold smoked then stripped then made into sausage. Grilled.

I think this is really old school Spanish /Argentinian cooking updated. $2 on the new light rail from my house. The place with the whole spit roasted lamb & pig thats part  restaurant part butcher shop will be next outing.

Sydney is the biggest city we have & getting bigger by the day. Apartment living is putting a lot of people into a smaller space. The urban planning debate rages on .This particular spot was only released to the developers by the state government on condition that in the eating & shopping Tramsheds they had to put a gym,medical centre & community centre. Various restaurant players went in there is even a place that is attempting to do southern states of USA food. It only just opened I will get there soon. Ribs, fried chicken,burgers,brisket.

I came from a little town of 5,000 tallest building was a wheat silo.

I've gotten soft in the recent years. I grew up with blood sausage. Us kids would have the first shot at the fried blood and organs from a just - killed yard bird. Now I am not too much into blood products. Probably my Jewish friends' influence.

Blood products have hung on here in ethnic kitchens & are now getting a bump in the mainstream. No one in my house except me will eat anything blood related.I just thought this was clever cookery,it was very tasty.

I think its baked in a loaf tin maybe in a water bath, then cooled cut ,seared for service. Salsa verde & this high end plain yoghurt gave it a great balance on the plate. It had garlic,cumin,paprika not sure about the rest . Nuggets of cheek & jowl meat mixed into the blood. No binders that I could detect. I can't buy pigs blood so I  can't try to replicate it.

The best blood sausage here ,IMO,is made by Rodriguez brothers who are Argentinean .Its more of a savoury evening meal style as opposed to the British breakfast tradition.Just my 2 cents.
 
Looks good, like in the UK, you can not buy fresh pigs blood, but you can buy dried, I have a batched mixed up ready to make "Black Pudding", should of been making it today but laid up due to a sickness bug. May be tomorrow.
 
As I get older, I like to try more exotic things.  Blood and blood "products"  (cake, pudding, sausage, etc..) I am just not sure I can do.  I would at least try it just to say I have, but with a hearty drink nearby just in case...  But, I am never one to rain on anyone's parade (not sure if that sounds rude, but not meant that way) so I hope you enjoyed.

You can buy fresh (or what I am guessing is fresh) pigs blood at larger Asian markets in large cities stateside.  I have seen it for sale in an Asian market in KC MO

I cant do that congealed pigs blood they serve in Asian places. I do like black pudding & enjoy the variations from cuisine to cuisine. 

This had a great texture ,crisp on the outside , very cake like inside. I think its old school Spanish thats been tweaked a bit.
