Since I got my new KA mixer and the metal meat grinder my inner child had to make something.
found a 4lb pork butt at $2.49/lb. not a good price but it fit the bill.
I did the recipe (grind and mix) exactly as in the recipe on the link below. We have been buying the Jimmy Dean HOT roll when they were bogo, cause mama makes me a sausge egg/cheese biscuit for breffus almost every morning. It was my first meat grind using the KA attachment. Followed the directions with a frozen apparatus, close to frozen chunks of pork. The only annoying part was de-boning and chunking the pork. My Wusthof chef knif made pretty good work of it. Final results were very satisfying as good or better than whatever ther stuff in those tubes at the factory. This won't be an everday meat grinding for me, as I can see a LEM grinder in my future.
The KA handled it well. one grind with "big" plate, the a second with the medium plate.
I can see this sausage in a batch of biscuits and gravy, though the fat content of a pork butt was maybe a little light compared to the tube.
