Block Party Pork Butts

Yesterday we had a block party so I figured I would show you guys my contributions.

2 9Lb butts went on at 6am and cooked for about 8.5 to 9 hours. IMG_20180807_092300_285.jpg
I pulled them out when they hit 160 and the fat cap split, and wrapped them up tight. 20180807_092426.jpg
Thanks to my thermpro thermometer I was able to keep an eye on things from inside.

When I reached 195° I pulled them out, wrapped them each in a towel and put them in the cooler to rest.
30 min before the party started I took one out and pulled it, saving the other for if I ran out. I didn't, which means 2 gallon ziplocs went into the freezer for enjoyment later.

I served the meat with 3 kinds of home made sauce and a smoked mac and cheese recipe I got off SMF. 20180807_150751.jpg
The mac and cheese was a hit! Not a morsel left in the pan!

Oh man, you have to be the most popular guy on the block at the moment. That all looks fantastic. I wish I had a chance to try that mac n cheese. That looks especially good. Great job. Two thumbs up.
