I did a small chub of pepper coated summer sausage.

Dont know if you can see the black pepper on it. Hey if it dont work then its only a pound.....EH

Gotta do a little more tweeking on the coating and not having the pepper come off from the casing while the stuffer tube is in it. But it will work.

Little more involved than just soaking. Need something for the pepper to stick to so i used food grade soy bean oil mixed with the water. Next time i will do it a different way.
 
The pepper held better than i expected.
