I’m hoping some of you have run into this..... I’ve been stuffing sausage into natural hog casing for years. Some I’ve bought online, others I’ve gotten at the local meat company. They are always white. Sometime packed in salt, other times in clear liquid, but always white. The local meat company recently changed owners and when I went to buy some casing this past Friday.......they were almost black. These were packed in a very, very dark brown liquid. I asked about it, the kid that sold them to me said that’s what they used and how they came. When I took them out to rinse them, they KEPT staining the water over and over no matter how many times I rinsed and the casings never got any light than dark brown. And they stained my hands....get this.....yellow. It was almost like they were packed in some kind of iodine solution, but they SMELLED just like any other casing I’ve ever bought. Have any of you experienced anything like this? Here is a pic of what’s left . I haven’t salted them yet for storage.
Time to find a new source (and new meat company if that is what they use for their products as well). That is not right. Try Syracuse Casings Co, they have excellent products and pre-tubed casings are a breeze to use.
They were darker than this when I opened the package. They were vacuum sealed in the package in whatever the liquid was. Smelled right, just not sure why someone would want to dye the casings.
