Birthday Wild Pork Ribs

    Tomorrows my birthday and for Christmas I got a MES 30 so I'll be making some pork ribs pit taters and green beans!!! Along with my MIL made birthday cake.

    I seasoned the ribs tonight. 3 with Uncle Chris steak seasoning and one with Chris Lilly's rub.
    I'll be smoking at 250. I need them done by 10 am. What time should I start them?

    I would say by 4am.

    Are you going to foil or no?

    My spares take around 5 hours on my mini.

    I need them done by 10 and then I'm taking them to my in laws. I guess I could finish them in the oven. I don't want to get up at 4. 5 is ok.

    Could I start them at 5:30. Smoke them until 9:45 at 250 and then finish them in the oven at their house?

  8. If you get there and the woman of the house has candles an potpurri going, I am thinking the BBQ smell may set her sideways.

    I cook them at 275.

    Yea, I think I would finish them at their house in the oven. Wrap in foil while transporting.

    Maybe I will foil them. Idk. I've been reading just now about foiling and it would be nice to have fall off the bones ribs.

    I might do 3-2-1. 3 hours at 250 smoking. 2 hours foiled. 1 hour in the oven at the in laws.

    I never foil ribs but it sounds like it fits the bill here.

    Nothing wrong with foil.

    I'll see how I feel on the morning. I want fall off the bone ribs. I'll see how they are cooking and decide about 2 hours in. Setting my alarm for 4:45:).

    Put it at 250 at 5:00am. Added Misquite chips. Happy birthday to me:)

    I'm still getting used to my MES. Im using a Polder Thermometer and my MES is off by 20 degrees lower. I bumped it up to 270.

    So my brand new polder thermometer bit the dust. I knew I should have gotten a maverek. POS!!! I tested it when I got it on Christmas and it was 1 degree off. Now it's 50 degrees off and dropping!!!
