Birthday Short Ribs, Qview

    I posted earlier how much I love short ribs and how I smoked them for the first time (

    It was my birthday and I decided I wanted short ribs again. A side note, is there something wrong with us smokers. It is our birthdays and we end up cooking? I think it is a sign of deviance that we like smoking our own dinners.

    My buddy doesn't like anything reminiscent of braised beef so I decided to try making the short ribs without foiling them. 

    I have stopped putting salt in my rubs. I am trying to limit my salt so I sprinkle it on so I can control how much I put on and then put a non salted rub on.

    So I rubbed canola oil on the ribs sprinkled on salt and applied a rub.

    The rub this time was:

    2 tsp pepper

    1 tsp sugar

    1 tsp onion powder

    1 tsp thyme

    1/2 tsp garlic powder

    1/2 tsp chili powder

    1/4 tsp cayenne

    I rubbed this into about 2 pounds of short ribs and put them in the fridge overnight.

    The next day, I fired up the Bradley with whiskey oak discs at 230 F at 10 am. I left them in until 1 pm. Neither my buddy or the missus like strong smoke so I pulled them and put them a 230 F oven. We were eating early because my buddy was taking me to a hockey game for my birthday (Go Kootenay Ice!). At 5:30, the ribs were at 203 F and I served them.

    We had teriyaki wings ( for appetizers.

    The missus made a delicious Chinese Noodle and Shrimp plate and a green salad.

    There was also a rum cake for dessert.

    The Verdict

    I had a great birthday. Everything was delicious. Good times, friends and wife. Also, the Kootenay Ice won the hockey game.

    As for the short ribs, the rub was great and they tasted wonderful. The rub was perfect. The major notes were pepper and onion but some nice complexity from the other seasonings. That being said, I preferred the way I made them last time, foiled with some soy sauce and pineapple juice. The slight sweet and the foiling gave them a better texture and a taste I like better. However, these were terrific, I just like the foiled better. I think I will use this rub on the ribs and foil them next time.

    Bear, it would be a distinct honour to have you at my table. I would be nervous serving the master but it would be an honour.

    Thanks, Adam. I have come to the conclusion that foiling and not foiling are just two different cooking techniques. Foiled pulled pork is different from unfoiled pulled pork but both are great. In this case, both style short ribs are great, foiled just suits my tastes more.

    Your Ribs looked great, I don't like Braised meat either , so I don't wrap anything, except to put it away...

    Oh , and the other dishes were delicious looking also , especially the Rum Cake , thanks for the memory jog. I need to make one now.[​IMG]

    you never said 25 times "i love short ribs" ...  LOL
    anyways im sitting on about 20 pounds of beauty short ribs a buddy brought me when he came fishing a month ago cause he knows I LOVE SHORT RIBS !!!!

    i have them vac packed in smaller portions. i am gonna do some up on the 15th or 16th as i will be outta town for a bit.

    seeing as you personally preferred your 1st batch i am gonna try them, sounds right up my alley...

    Thanks, Goliath. If you don't love short ribs, there is something wrong with you! However, should point out my buddy prefers them unfoiled. Each to his own!

    You, my wife and my friend. I love braised meat! 

    The rum cake was my wife's idea. I used to love them and she dusted of the recipe to surprise me. It pays to be nice to your missus.

    First off, great looking meal!

    It is just the natural order of things.  For Mothers' Day, we take them out to the FooFoo place of their choice.

    For Fathers' Day. our birthday, and almost any other occasion, we get to grill or smoke and have a couple of brews.

    I take it as a compliment and I can handle it?  [​IMG]

    I am among the few who will foil or braise short ribs.  And I sure do love them!

    Man, it was your birthday but you keep giving us all the gift of Q-view!! That was one hell of a well documented ( and delicious looking ) meal. I must admit I have a weakness for rum cake myself. I'm not ashamed to disclose I use a "cheater" recipe involving a boxed cake mix. A good friend starts casually dropping hints a month or two before his birthday each year, and that's coming up so I guess I'll have to dust off my recipe too!!

    Thanks, MD. The recipe we use is the old one with a boxed cake mix and a box of instant pudding (he hangs his head in shame). However, it is a memory from my younger days and we make it from time to time.

    Sounds to me like you are the good friend! You have to like anyone who cooks for you.
