Birthday Dinner, Pork Belly Burnt Ends, Stuffed Moinks, ABTs and Seared Venison Medallions

Looks amazing! Whats the technique for the caramelized pears?

Caramelized Pears/Apples
4-6 Ripe, juicy Pears or Apples, quartered and cored
6T Butter
.75C Brown Sugar
2-3T Bourbon or Rum
1t Vanilla extract
.5C Nuts or crumbled Graham Crackers

Melt butter in large skillet over med heat
Add fruit and cook till golden brown over med high heat
Add Brown Sugar, Vanilla and alcohol
Cook till sugar caramelizes
Coat fruit well, garnish with nuts or crumbles
Serve with ice cream
Spoon excess caramel over ice cream

Belated happy birthday wishes to you Chile! Man it sure looks like you celebrated in style! The venison medallions look especially good, and has me looking forward to the upcoming bowhunting season here in WI.

Like so many of the other threads I've read here, this one gives me more great ideas to try.
