Just wondering if anyone has used either beef rounds or collagen casings for ring bologna? Which one is better? Is there a difference in taste, and smoke penetration?

Thanks a lot! I will be using hog casings. I think I will try Syracuse casing company their hog casings are from the USA and they are also processed in the USA
