[SIZE=Good evening my name is Pam I'm in Ohio and am beginning to smoke using wood chips. I've been a grilled for the majority of my life. My question for tonight is what's the best way to get the most flavor from wood chips and how to use them. Indirect heat . Steam or what?:grilling_smilie:[/B][/SIZE]

If you are using a charcoal grill, it's best to use wood chunks.

Just put them on the edge of the coals so they smolder.

If your using a gas grill use chips wrapped in aluminum foil with a bunch of holes punched in it.

Just put the foil packet over one of the burners.

You can also purchase a cast iron chip box that will work like the aluminum foil.

Welcome from SC. It's really good have you on this great site. I also much prefer chunks. Don't soak them, just put on the coals for good smoke and flavor.
 
Thanks for the answer to my question. I guess I wasn't clear in my previous posts. Being a beginner in the arena of smoking I'm learning the language. Since I don't want barbecue and want smoked meat I want to learn what to do and the right way to do it. I also want to learn about curing and smoking various kinds of meat.
