So after my Friday Fatty. I went on to do a beef tenderloin for dinner on Saturday.

Did a light rub on the beef. More interested in the smoke flavor with the beef then the rub.

Put in the smoker and using 2 probes for this one.

Took it to 135 and pulled. Let it sit for about 15 minutes. Very nice.

Turned out perfectly done. Plated and dinner is served.

Mooo! Looks great! I Just got a 4.5# today,on sale $7.99/#.What temp/wood you smoke it at?
 
I used cherry in my amnps and lit both ends for lots of smoke since it wouldn't be in that long. I had my MES40. I cold smoked it for the first hour then set the unit to 250. Took about 3 hrs or so.
Yes some would say it was at Moo doneness. For a piece like this. It's worth it. Normally I eat beef much more cooked but for what it cost. I'll cook it the correct way. It came out so tender. Flavor was there on the coating. Inside, well it was awesome. This was my first one. Very happy with the way it turned out.
For now not sure on leftovers. Open to suggestions on that one

Well I think you nailed it.I eat steaks medium or medium rare but like tenderloin on the rare side otherwise it looses a lot of its flavor.As for leftovers, two words :French Dip.I put the leftover in the freezer for a few hrs and slice it on my slicer,vac seal individual sandwich amounts and then boil in bag to reheat.Also this might be a good time to get a sous vide machine if you don't already have one...I don't have one :(

Thanks everyone. The only thing I am missing is a sous vide machine also. I to lack in one. But one day.
Me and the Misses love french dip. Thats a good choice. Think I'll break out the slicer.
