Last weekend I decided to try my hand at smoking some beef short ribs. I seasoned them with Meat Church "The Gospel" rub, and smoked them on my Camp Chef with Oak pellets. The cook took about 12 hours total, and I wrapped them in pink paper at the 7 hour mark.

Boy, they turned out GREAT! Juicy, just the right amount of smoke, and you could cut them with your fork.

I'm going to do them again this weekend!!

Those ribs look great. We don't see them to often around here, but when they show up they go in the shopping cart.

Point for sure.

I did my first dino ribs a couple a weeks ago. People went nuts! Yours look great.

I let them sit for almost an hour before cutting, and the rivers of juice just flowed. Its like a brisket on steroids!

Those are beautiful ribs..... Great job!
 
Thanks everyone ... I'm humbled by the response, and making the carousel.

I started them at around 225F, and after 7 hours I wrapped them in pink paper, and raised the temp to around 275F. I took the meat up to 210F internal temp, pulled them from the grill, and let them rest in a cooler for an hour.

When our guests arrived I took them out to carve them. I almost didn't share any! Luckily I smoked 2 racks ... this was one of the 2, so there was enough to go around!!!
 
Great looking beef ribs, Just grabbed our last pack to do here at work in the next while. Hope they look as good as yours. Congrats on the carousel ride.
