Last weekend I decided to try my hand at smoking some beef short ribs. I seasoned them with Meat Church "The Gospel" rub, and smoked them on my Camp Chef with Oak pellets. The cook took about 12 hours total, and I wrapped them in pink paper at the 7 hour mark. Boy, they turned out GREAT! Juicy, just the right amount of smoke, and you could cut them with your fork. I'm going to do them again this weekend!!
