Well, the original plans was to go out for dinner. But Ann decided not to. So, after digging around the fridge and freezer. And a trip to the store for some fresh mushrooms. I came up with this.
One large sweet onion and 8 ounces of sliced fresh mushroom sauted in butter and olive oil until soft
Took 4 thin slice eye rounds and seasoned with salt and pepper. And added the onions and shrooms.
Rolled up and wrapped with bacon.
Next step was to take a pound of whole mushrooms and remove the stem. And scrape them out some. And coat with melted butter.
Take a pound of crab meat. This was blue crab claw meat. And mix with 2 tbs mayo, 2 eggs, salt, pepper, and old bay.
And stuff the shrooms. And top with grated asiago.
Place in greased baking dish. And into the oven at 375 until done.
Roll ups coming along nicely with some precooked garlic and herb crusted little taters.
Plated up. Had with a glass of vino. Great dinner and didn't have to fight traffic!
