Greetings all! Well, this is my second go at beef ribs. A few days ago I posted my first go at beef ribs. The center cut was good but not enough meat. I went by my local butcher and she showed me the plate ribs. I now know why many call them Dino ribs. Huge! I bought 4 sections. Smoked 1 and vac packed the others. I must say, they turned out very good. Produced the bark that I was looking for. Very tender, juicy and flavorful. I stayed simple with it. Trimmed the fat and silver skin. Did not remove the membrane so they will stay together. Dusted with steak and brisket rub, extra black pepper and a bit of salt and that was it. The Bayou Classic stick burner never disappoints. She rolled the hickory smoke for 10 hours @ 250. Just added hickory logs from time to time. No wrapping. Smoke ring was just right. A fun and satisfying smoke if I must say.
