Greetings all! Well, this is my second go at beef ribs. A few days ago I posted my first go at beef ribs. The center cut was good but not enough meat. I went by my local butcher and she showed me the plate ribs. I now know why many call them Dino ribs. Huge! I bought 4 sections. Smoked 1 and vac packed the others. I must say, they turned out very good. Produced the bark that I was looking for. Very tender, juicy and flavorful. I stayed simple with it. Trimmed the fat and silver skin. Did not remove the membrane so they will stay together. Dusted with steak and brisket rub, extra black pepper and a bit of salt and that was it. The Bayou Classic stick burner never disappoints. She rolled the hickory smoke for 10 hours @ 250. Just added hickory logs from time to time. No wrapping. Smoke ring was just right. A fun and satisfying smoke if I must say. Happy trails and keep on smokin!!!

Outstanding ribs!I love the ring on them. Give me a plate of those and some dipping sauce. And I would be one happy camper!

Beautiful ribs and a perfect job smoking them, big Like! That's my favorite thing to smoke on my offset, beef ribs with hickory, don't get any better then that. RAY

Those are from the arm shoulder, not the plate. The plate ribs are a lot fattier, like spareribs on pork vs. baby back ribs.

That is where they come from, off the arm shoulder, not the plate.

That's what she said. I could care less whether it's a plate, a leg, an arm or a hoof. They were outstanding and I will continue to smoke em.

Not around here! The guy edited my post title name to arm ribs. What tha!! I changed it back. Sure didn't know folks could jack with your post? Not happy with that at all. Not at all. Hope he does not change it again.
 
Accuracy is important

plate ribs are very different from the ribs from the chuck

I'm not sure why you'd be upset about the title being corrected, especially when your supplier even told you they were not plate ribs
