Have any of you ever dehydrated jerky and a powdery residue forms on the the meat. I dont know why it only forms in some of the pieces and it has a different undesirable texture and flavor. Any suggestions?

Minerals and salts condensating and then dehydrating on the surface of the meat. You're good to go.
