Hey ya’ll!
Jerky meat went down $1 per lb so I got 4 lbs for $16. Not bad. I have a friend that loves my jerky so I’m making some today.
Looking good so far. It takes about 4-5 hrs. I like mine cut a bit thicker and don’t dry it out so much. Little different texture which I’ve found more people like better.

Eye of round,
I use a teriyaki based marinade and then put onion powder, garlic powder, soy, siracha, cayenne, black pepper and brown sugar.
Can’t wait to do some “quality control”. Will let it dry a bit and then he can come get it tonight. It’s best warm but usually doesn’t last too long.
 
Nice , yeah top round and eye of round are great. You didn't bother cutting it down much hey? Big slabs.. :D
I'm making some tonight with the top round we had for $2.99 lb.
 
I like it thicker but it’s also easier to leave the pieces bigger to me and then once it’s done I can decide if I want to cut it into smaller pieces or not. Also easier so that I don’t have to turn 1,000 little pieces vs bigger ones. Try to be efficient

We are at soccer practice now but jerky was getting close to the time where I start looking at it. I’ll post some pics once it’s done.

Here is the jerky done. It’s really more like thinly smoked steak and it’s oh so good when it’s warm right off the smoker. I’ll let it cool for a bit on the drying rack. Didn’t feel like getting the other one dirty so only using one. Then will cut some of the bigger pieces and put in a ziplock. My friend will get it tomorrow. Thanks for looking!

I've never had thick cut jerky before, I'm going to have to give it a try!
I make ground beef jerky cause I don't like chewing all day, but from what you say, the thicker pieces aren't as chewy.

Oh you totally should give it a try.
I love the dry jerky but it’s really hard to chew it forever.
This is moist, flavorful and chews easily.
I keep it in the fridge, don’t put any cure in it or anything and just eat in a week or so.
Made this batch sweet and spicy. Used brown sugar but then a lot of cayenne and some siracha.
Let us know how it goes when you make it.
