We're having a winter warm spell, hopefully the kickoff for an early spring. Yesterday I fired up the drum smoker for a small rib-fest. Seasoning on the beef ribs was Goldee's Brisket Rub.

The spares were for freezer fare, and will be vacuum sealed for SV reheating. Seasoning was Cimarron Doc's and Gospel.

Awesome . I'm down to my last rack of St. Louis cut . Never see beef around here .
 
Now that's a "tray" of goodness right there! Very nice work and ps, we called that warm day we had on Friday....false spring cause it snowed today......

Are those beef back ribs? One of our Walmarts just started carrying those. I've been debating on if it looks like theres enough meat on them to make them worth buying.

We got snow overnight, and will see another day later in the week. The warm weather is causing havoc with ice fishermen, there were several accidents and rescues in February.

Yes they are. If you catch them on sale and don't see too many shiners they are a good deal because the meat is delicious. You have to really look close at the packages because the meatcutters will often get too close to the bones and they will have blowouts during cooking

The other option is to buy a bone-in roast, but request they leave the bones attached, then you remove them leaving more meat on the ribs. This is easy to do, then you slice the roast into steaks.
