Bear’s Smoked Prime Rib (Easter—Cherry Smoke)


For a number of years, we’ve been having our Easter Dinner at Bear Jr’s house, but this time his In-laws couldn’t make it to his house, so there was only the 4 of us. That meant we had room at our small Log House.
Also we usually have Ham for Easter, but I can do without the extra sodium, so I decided to Smoke one of my Signature Prime Ribs, and everybody seemed to like the idea.

So I picked one from the Freezer that was 5.62 pounds, and did the 3 day Thaw in my Fridge (After about 3 hours in the sink). I decided on Cherry, because I just got some Cherry Dust from Todd.

Prepping (3-31-18):
Rinse, Dry, and cut a block pattern through the fat cap to the meat. Then apply a coating of Lea & Perrin’s Bold Steak Sauce, CBP, Garlic Powder, and Onion Powder. Put Roast on a Wire Cooling Rack in a Foil Pan. Then covered it in Plastic wrap, and put it in my fridge for the night.

Smoking Day (4-1-18):
10:15—————Preheat MES 40 to 225* (Shooting for 140°—142° IT at 4 PM)
10:15—————Fill 2 rows of my AMNS with Cherry Dust, and light one end.
11:00—————Put Roast on wire rack, in foil pan, on a rack, in #2 position in smoker.
11:00—————Put smoking AMNS on right end of bottom rack in my Gen #2.5 MES 40.
1:30------------Insert sterile probe into center of Roast. Internal Temp is at 112°
3:00------------133° IT---Put 4 of Mrs Bear’s Twice Baked Taters (Cheese & Bacon) in Smoker.
3:30—————-138° IT— Cut heat to 140° to stop the cooking.
3:55—————-142° IT Remove Roast to Kitchen for slicing.
3:55—————-Also Remove Twice Baked Taters from Smoker.
Slice, plate, add sides, and eat.

Everything looks great Bear! I have been craving some prime rib lately and this might puch me to try one in the pellet grill this weekend. Did you do the cross hatch in the fat?

Nice job on the smoked prime rib! 142F ITT is confirming what I saw in my spit roast. I hit 138F ITT and the meat was still rare just like yours! Looks like your family had a fantastic Easter!

Screw it---We got 7" more snow, but I didn't shovel any.

Prime Rib looks amazing!
How does the dust do compared to the pellets?

Dust works Fine.
When I want Cherry smoke, I always use Dust, because Cherry is the only pellets I can't get to burn in my AMNPS. I think it's the oil content in the Cherry wood. I used to see it all the time in Cherry wood in my Cabinet shop.
