My third smoke on the new Rec Tec Bull. Our first smoke was an easy pork butt. The second smoke we cooked the wee bit more difficult ribs and chicken. All turned out better than I expected.
Okay so... Now I think this guy and the machine see eye to eye. And now it is Time for the REAL reason I had this ol’girl shipped to Texas. BEEF.
So, 11 pounds of well marbled Prime Brisket. ...The acid test for this smoker. IMHO the most difficult meat to get JUST right. Let’s hope it won’t disappoint us! B

At 7am Sunday morning we have an IT of 176. So far so good. Giving a quick sprits of ACV and Water. Yawn... Need coffee. B

The brisket has hit an IT of 203. Time to test it for tenderness. There is a big debate on how to do this. Most use a toothpick. Heck we’ve even debated if you should use round toothpicks or the flat ones. It’s unanimous that the cocktail toothpicks with the frilly ends should absolutely not even be legal to use.
As for me... I use my switchblade. For 2 extreamly important reasons.
  • One because it’s really cool.
  • Two I like seeing the look on people’s faces when an old guy like me opens a switchblade! ;)
It’s perfect. Time to take it off and give it a rest. B

I love ya brother! What a beautiful piece of meat! I blew coffee all over the monitor about the toothpicks. Had that same discussion! LOL...... Like Crocodile Dun-Bryan, "Nawww, THIS is a knife!" That may be the best brisket ever smoked!
