Now I gotta get a switchblade! :)The brisket has hit an IT of 203. Time to test it for tenderness. There is a big debate on how to do this. Most use a toothpick. Heck we’ve even debated if you should use round toothpicks or the flat ones. It’s unanimous that the cocktail toothpicks with the frilly ends should absolutely not even be legal to use.
As for me... I use my switchblade. For 2 extreamly important reasons.
It’s perfect. Time to take it off and give it a rest. B
- One because it’s really cool.
- Two I like seeing the look on people’s faces when an old guy like me opens a switchblade! ;)
