LOL  Thanks for the point Charlie. Better get bird partssoaking!  Ive never brine / cured an entire bird.  I wonder how long of a soak it would take?  Thinking out loud you'd might have to inject the breast thigh meat? b

I do them regularly! About 3 days to a week in the pickle, rinse and dry, into the bag, then in the smoke at 225 until done. Most excellent stuff.

Yep I am a late comer as well. I also missed this one. They look Fantastic. And yes I saved it as that is something we don't see here often. And yep I want to make it now......
