I like your style of cooking Lance. More beer always makes it better :-) As I was reading through this, I had an idea. The wife can't eat chicken but this dish sounds fantastic...too good to overlook because of chicken. My thought was to use Cajun spice instead of BBQ rub and homemade Cajun sausage instead of chicken. All the rest of the stuff sounds like it'd go well with that variation. Sort of like a gumbo but not quite....
