Damn nice Jeff, I have never done this....that will change. I made your cuban casserole and this would elevate it even higher.
I use it when I do the casserole. Lol I had so many friends want to donate for some of this that I need to get like 4 more so I can get some in the freezer.

I've never tried a pulled ham but you sure get great results Jeff!

Here is my sloppily written recipe. For the sweetener I suggest Brown Swerve as tips, Golden Lakanto for a more maple flavor and you can also just use a white sugar sub.

We double-smoke hams often...primarily because it is easy to feed a lot of people and more importantly, cuz we love double-smoked ham salad with the leftovers. Definitely going to through an extra ham in and give pulled ham a run after seeing this post. Very nice!

$0.79/lbs is a super great find!

Yea I wish I'd have gotten more! I love double smoked ham salad too. I have two spiral sliced I'll do that with.

I’m late to the party on this one. The ladies at work I guess saw it somewhere and asked if I could do smoked ham for a potluck next week. so came here of course.
yours looks absolutely amazing. Gonna try to replicate that if I can.

Rub was my standard keto pork and chicken rub with some added clove, allspice and sugar free root beer drink mix.

I put both in tightly covered pans with a cup of liquid at 165F

I think I finally have the nerve to try this. I have always worried about it being dry but seen it done enough times now. Do you have that rub recipe handy? I just love your sweet heat. I guessing that liquid you put in pan the root beer? Not sure what I going to use to smoke with. Either the RecTec with tube or the WSM? Either way I will use your 275.

I make sure to put these in a pan with liquid tightly covered once they hit 160ish. Here is the recipe for my keto sweet heat. As noted sometimes I reduce the cinnamon and at times I'll double the paprika but it's good as written. Next time I make a batch I'll pay better attention to what I do with the paprika. For the root beer twist I add packets of sugar free root beer water flavoring to taste. I really like what it adds for the ham. For the liquid to add to the pan if I have it on hand I mix up some ham base with some of the root beer powder too.

  • 1/4 cup Smoked paprika
  • 3 TBSP each salt, pepper, onion powder and garlic powder
  • 1 TBSP cumin ,cayenne and cinnamon , I often cut the cinnamon to 1t and taste first. Cinnamon strength varies quite a bit. This is great on chicken and pork.

OK thanks. I have the sweet heat and love it. Thought you using a different one. I have diet root beer soda and not powder. I will try to use that.

I'd highly suggest the powder. It's just something like the single serve water packets, usually Dads or I prefer the AW. Like $1 a box. Funny enough I have two butt hams I grabbed for $0.79 a lbs last month. Plan on doing them in the next week.

Hope you dont mind one more question Jeff. What about putting the ham in a pan on a rack? Looks like you have one under but I dont have room. Guess would need to put some kind of liquid in it? Also would I use that liquid to put in the pan while covered? That liquid would go back into the pulled ham so dont want to mess it up. Thanks bud. The only place that has that Root beer powder is dollar tree. Going to go look today.

Edit Found the RB. Mixed up seasoning with some clove and allspice. I had to grind some allspice berries. Added one sleeve of root beer The taste is really coming through so I quit there. I will rub ham tonight. Dont know why but I feel like a rookie on this one.

No worries at all Brian. You can put it in a pan without liquid and then add the liquid when you wrap the pan at 160. I have a friend who caters who does all his stuff in pans. I get all my drink mixes at the dollar stores. I gave up my diet soda over a year ago but do the flavored water.
 
Ended up turning out really good. Thanks Jeff. As usual most will be given away. Need to save some for that dish you like to make. I done using cherry chips and pellets. Very hard to get burning! I even heated in the toaster oven before loading. Spent a hour relighting every ten minutes. Than just went ahead and put ham in. Tried a few more times and after called it quits the last time it stayed lit.
