hey pete! no those were not food city ones...........bastids have been running $1.99/lb. these were fry's @ $1.49 when they had a BOGO sale. ypu they had that big ass bone but i just worked the knife and did a lot of trimming to square them up......that just means more meat for sausage!. as for the rain i'll believe it when i see it.Looks good Rob!
I need to know how you keep your butts so even when you butterfly them open. The last ones I did (from walmart) had darn near the entire scapula in them and when i finally got them boned, all the different muscles seemed to separate apart. I still got good bacon but it's in smaller pieces almost like CB. Did you get those from Food City? Did they have that little sliver of a bone like in your tutorial post?
