Thought I’d try something a little different threw these on the smoker for a couple hours at 250

I’m inspired now I have some Texas hot links in the freezer along with some bacon, and I’m sure I have some cheese too!

I loved them. heck even my wife liked them and she’s normally 50-50 on anything new I try.
i’ll probably try some hot links next time too. I like those better and do some regular for her too. One thing is after that picture I torched them a little bit just to crisp up the bacon and I used cream cheese with diced peppers mixed in.

Thanks never thought of cream cheese until I smoked some last month it came out great.
I always thought it would melt.

SHOOOOT YEAAA... those are awesome ... good job

Can I offer a little suggestion... Next time don't make the sausage so long.. cut them a little shorter.. this will provide a cup (so to speak) to hold all that goodness inside the bacon and not run off down the sides...

Sometimes I will mix some of my favorite rub with dark brown sugar... use that for the filling... Pork Shot Candy ...

Thank you. And Thanks for the tip! I had already figured on cutting them a bit shorter next time to allow for a pocket. I also thought about using beef sausages and treating them like burnt ends with bbq sauce, spice and some brown sugar. I’ll post up when I make the next batch.
