Bacon Wrapped Pork Loin

While out I saw a 5# Bacon Wrapped Pork Loin and while normally I would wrap my own Bacon prices are still high in my area so decided to roll the dice.

Going to start it at 250 using cherry pellets and finish off at 350 once it hits 120 IT or so to crisp up the bacon some. I’ve also decided to cook some potatoes. Each is using a broth of 6 cups chicken broth and 1# unsalted butter split between the two.

Feels like it’s too much liquid but guess we will see.

Pulled loin at 138 on the probe and random pokes ranging from that to 141. Wrapped to rest while potatoes finished up and family clean up from taking a dip in the quarry.

Holy $#/+ that is a lot of potatoes! It all looks good so far though! Cant wait to see your end results!
 
Looking good, pu about a 3lber that looked just like that and cheated, throwed it in the convection toaster oven, turned out great,

The pork looks great and was thinking the same on extra potatoes. Dice leftover Pork and Taters with some Onion and Peppers, if you like. Saute and add a bunch of scrambled eggs for a great Breakfast...JJ
 
Looks great and there is always a way to use left over potatoes. Sounds like my house when the kids were all home 6 + 2 makes 8.

We are big HASH fans! I make an extra large batch of Corned Beef and Cabbage, just to have leftovers to fry Crisp in Butter, for another meal later in the week. Bev likes the Hash better than the meal...JJ

Pork loin looks great wrapped in bacon! I love that you made the extra potatoes. I’d definitely would be looking forward to breakfast the next morning!
 
So how did the spuds turn out. Just curious, 'cause it sure did look like a lot of liquid.

They were perfectly cooked but I couldn’t taste a difference between the two so it does seem the seasonings didn’t do much to them. Used the left over liquid to season some veggies.
 
Looks like a great meal and breakfast the next morning would be awesome using those left over taters
