While out I saw a 5# Bacon Wrapped Pork Loin and while normally I would wrap my own Bacon prices are still high in my area so decided to roll the dice.
Going to start it at 250 using cherry pellets and finish off at 350 once it hits 120 IT or so to crisp up the bacon some. I’ve also decided to cook some potatoes. Each is using a broth of 6 cups chicken broth and 1# unsalted butter split between the two.
Feels like it’s too much liquid but guess we will see.
Pulled loin at 138 on the probe and random pokes ranging from that to 141. Wrapped to rest while potatoes finished up and family clean up from taking a dip in the quarry.
