Side note:
This meal only took two beers and one cigar to prepare, clean up included.
 
Very nice! I quit smoking, but 2 beers? No way for me! Lotsa back ribs cooks showing up these days and all including these look killer! Hominy and green chile? Do tell!

OK guys, I have to confess. I was looking for a different side to go with ribs.
The recipe is one of Kent Rawlins'. It goes like this:

1/2 lb thick cut bacon cut to 1".
1 medium yellow onion, diced
2 15 oz cans yellow hominy, drained
1 4 oz can diced green chillies
1&1/2 cup sour cream
8 oz sharp cheddar, grated
S & P or rub for seasoning

Fry bacon 3/4 done and add onion, cook to translucent. Spoon off about half of the grease.
Mix hominy, green chillies, sour cream and seasoning, add to bacon and onion, blend.
In 9x13 casserole dish or dutch oven, bake at 350 for 30-40 minutes. Last five minutes, top with cheddar until melted.
So easy and so good!
