First smoke since getting my MBG 1050 back online. Nothing fancy, but feels good to be back.
Couple racks of spares with a mustard binder and SMF pork rub.
Quick temporary mod to the 1050 to override the safety switch that keeps giving me fits (don't try this at home unless you know what you are doing)
These were pretty big racks. Could've squeezed them on the middle rack but put them right on the bottom so they fit easily. Ran with the water pan as usual. 225 with hickory all the way through, no wrap.
Served up - not my best work, the racks were not even close to uniform in thickness, so part of each rack was FOTB while the thicker part was barely to 190-191. Sauce wasn't on as long as it should've been as I pulled when they were ready, got done a little bit faster than I thought. Wasn't paying a lot of attention as my parents are in town, and was visiting and having a couple of beers with them. No matter, the ribs were really good as usual, and my dad happens to like FOTB better, so he was happy.
Feels good to be back smoking.
