Baby Backs in Buffalo lots of "Q View"

    Favorite butcher hooked me up with 3 beautiful slabs.

    I'll do these 3-1-1 with honey, butter, and brown sugar during the foil stage. A final sauce for the last hour out.


    Trimmed them up as the rub components assembled.


    Built a fire a nice layer of lump and hickory.




    Ready to go! Put these down at 2:45 eastern. Bills are winning!


    Running at 220 see you in about 3 hours as I foil

    Looking great!! If the Bills win you will have to do 3 slabs every game day!

    Nice looking Smoker , and those are some great looking Ribs. They will be Tasty and Meaty , too [​IMG]  When you do Ribs , do you leave the door shut, or peek in a lot...just curious.[​IMG]

    I would like to peek, but being I use a foil method I get to check them out at 4 or so hours.
    Thanks on the smoker. I really like it. Very versatile for my uses.

    No more snow here but this is what our dealership looked like 6 miles away.

    Oooo, I got stuck there one year on a truck delivery... 3 days of walking through 6' trailways to go anywhere... lucky and met a Gal that took me in and cared for me . . . [​IMG]  

    Cowboy hats draw women , and the drawl gets them every time... [​IMG]

    Ok 3 hrs and ready to foil.


    Wrap these baby's up with honey, butter, brown sugar. No liquids. Add some charcoal then another hour no foil and some bar b q sauce!

    Back on for the final countdown!


    Sauced up and another hour. Added a few chunks of hickory.

    Came out awesome, super tender, meaty! Some potato pancake. Nice!

    ribs look awesome... If your in Buffalo how's come your smoker isn't buried in snow ?? none on the ground even under the smoker.... It all melted that fast ??

    My part of Buffalo only got a foot or so. 5 miles south got 7 ft. All gone at our house!
