As the title suggests, I am searching for a real deal authentic Tasso recipe. I'm not interested in most of the ones Google can find. I'm looking for a real recipe that you or your family uses.

indaswamp indaswamp has a few Tasso recipes floating around here

After a site search and looking at one of the recipes he posted about, I wasn't convinced as it wasn't using curing salt in the recipe. Perhaps I am mistaken, but I don't mind learning new things.

I just looked up a few and he does use curing salt. Stand by I'm sure he will see this

Yep. I use cure #1 when making tasso. I add 1/2c. water per each 4# of meat along with the cure and salt and brine the pork slabs 3-4 days usually. the cure will have penetrated to the middle of a 1/2" slab of pork in 1 day, but 3-4 days will give a better color. When time is up, pour any liquid remaining in the container and add the Worcestershire and hot sauce to coat the meat for the rub to stick.
