Aromatics add an aromatic dimension by tossing fresh leaves,stems or otherwise herbs onto the coals . Bay leaves,rosemary,grapevine cuttings,fruit peel or even cinnamon sticks are examples of aromatics.

Anyone use this method ? I just use wood and rub . I did see Tuffy use veggies in his chicken brine for added taste but no other aromatics have I seen used .

Not sure if I would toss them directly on the coals - they would just burn and might cause a bad odor/flavor. But I could see adding them to either a water pan or on the grate level closest to the firebox.
 
When doing some asian inspired dishes I have tossed green tea leaves on the coals in some foil.

Also when doing jerk chicken I have done the same with allspice since I havent had access to the pimento wood which is typically used for smoking jerk meats.
 
I use them in my beer can chicken that I smoke. Last year, I threw in a little salt, peper, chopped garlic, rosemary and thyme right into the beer. You could smell the rosemary and thyme along w/ the smoke (used alder) everytime I stuck my head over the vent. Turned out very well!
