Pot pie is simple to make so I will not bore you. But using left over smoked chicken makes it special. I used the chicken, green peas, onion, carrots, celery, potatoes and a little green onion tops. Tony's for my seasoning. Oh and I made my own crust...... I f I could make a crust like this every time, I'd go into business. Light, flaky and buttery, OMG its delicious!

Smoked Chicken Pot Pie!

Just an idea for all that leftover turkey soon to be upon us.

Pie was good, crust was exceptional.
 
Looks nice. I can Bake just about anything but that Perfect Crust, tender and flaky, eludes me...JJ
 
And here I just make chicken salad outta mine.I am NOT a baker,too unforgiving.Beautiful looking!

Chef I am so hot and cold on crusts and I make them all the same. Its like my first yeast bread, when I finally gave up and didn't really care (I keep a Pillsbury pie crust in the reefer all the time), they turn out great. Its like I scare 'em into turning out ok....LOL

I LOVE pot pies. Something about the comfort food thing, the creamy gravy, the smoked meat bite, the smooth texture of the pie dough.....geeze I just drooled all over myself. POINT
 
That's a great looking pie, I am a big fan of pot pies, I did a few pecan pies on the smoker this summer and turned out good, I am definitely going to have to try that..... Point....

You want to be a baker, learn one basic bread, you any to be a pastry chef learn how to make a crust.

Thank you, You know I don't use the recipe. Its about approximations. And if I could do that pie crust every time, I'd open a pastry shop.

Thanks, my electric smoker wouldn't get hot enough to cook a pie. But I bet it would be good that way. I have been known to do the occasional pecan pie (some with cane syrup, some with satsuma's, some with honey, I have pecan trees so we have pecans) Little low right now. No pecans this or last year. BTW those are all gallon zip-locs

Great idea Kev. I don't smoke much chicken but next time I do msybe I'll throw some extra on.
Afraid I take the lazy out and just add some of my smoked paprika into the mix.

Thanks, Gotta tell you Gary, I can actually smoke chicken while cooking supper sometimes with no idea what they'll be used for. That evening and the next or two are fun thinking of what I can do with it. Pick a nationality, Italian, Mexican, Greek, French but the British is always the hardest. I like spices! LOL

Pot pies to me rate right up there with Mac & Cheese, Chicken & Dumplins, Gumbo, chili, its just one of the essentials to know. When its nasty and gloomy to come home to a big bowl its like you are going to live thru it all.

Thanks Jason, but you know my pot pie secret? A pot pie ain't a pot pie unless it has green peas in it. When I was a kid ya knew ya had a good pot pie when they had green peas in it. Today, some do some don't. LOL
