Went to my local supermarket. They are not restocking the shelves so they can clean the entire store on Monday.

I wanted beef short ribs. Nope. How 'bout a lil tri-tip?

Sold!

Dry brined with kosher salt and a little bit of sugar.

Added Black pepper, garlic & onion. A little smoked paprika and tossed it in the GMG Davy Crocket for an hour and a half, until it hit about °105.

Covered it with foil and my hot pad kevlar glove thing to rest for about 20 minutes. Then stuck it under the over broiler until the Sous Chef couldn't stand it any longer.

Thats some good looking tip man! Got a few racks going right now myself. I have a 85lb boxer that has learned a very specific position to sit in while do smoke runs. The eyes. LMAO. Looks good!
 
That TT looks delicious!
Our local grocery just started carrying TT’s, but they are still a bit pricey!
