On another thread, we're trying to figure out how to reverse-engineer the recipe for beaver tail aka smoked flank steak from the Miltona Meat Market in Miltona MN. I was wondering if this is a regional delicacy or is it unique to the Miltona Market? My friends that grew up in that area claim that while the package may say Smoked Flank Steak, everyone in those parts just calls it beaver tail.
