Pervuvian cluckers thread found HERE. Came out pretty good, but next time I'm gonna either brine the bird or shoot it with some Tony C's. Maybe I just got a bad bird but it was a touch dry. Also, I'll be sure to loosen up the skin and get the marinade rubbed up in there so it really gets into the bird. I made rthe marinade and Aji Verde as he posted. Next time I'm gonna leave the seeds in the jalapenos to kick the heat up a notch. Good stuff!
I thought I took more pics, but I'm not finding them. Anyway... the pic doesn't do it justice but the marinade put a nice color on the skin.
Couldn't tell you how long this had been on, but I was coking with the cover on. Between wind and outside temp it was a must. Pic is a little fuzzy, I probably didn't stop the spinner. We'll not blame alcohol for that. Awesome color on the skin, started to split on the legs.
Finished product. Yum.
