Another Spinning Chicken

Total copycat of bakerman bakerman Pervuvian cluckers thread found HERE. Came out pretty good, but next time I'm gonna either brine the bird or shoot it with some Tony C's. Maybe I just got a bad bird but it was a touch dry. Also, I'll be sure to loosen up the skin and get the marinade rubbed up in there so it really gets into the bird. I made rthe marinade and Aji Verde as he posted. Next time I'm gonna leave the seeds in the jalapenos to kick the heat up a notch. Good stuff!

I thought I took more pics, but I'm not finding them. Anyway... the pic doesn't do it justice but the marinade put a nice color on the skin.

Couldn't tell you how long this had been on, but I was coking with the cover on. Between wind and outside temp it was a must. Pic is a little fuzzy, I probably didn't stop the spinner. We'll not blame alcohol for that. Awesome color on the skin, started to split on the legs.

Interesting cook. More to follow, but I'm gonna play with this. I want to put a duck on the rotisserie.

Did you marinade the bird? The marinade is crucial for the flavor IMO. It helps to get a really nice tender, moist chicken. Douse it in the Aji Verde and watch it vanish.

Very happy you tried this, I feel like a contributor.

Youre gonna love it. I've been using mine a lot, in fact I'm a bit obsessed with it. I'm not the most creative person around so new ideas are hard to come by. Chix, lamb now a roast beef.... gotta find something else to spin. I did a picanha and that was a learning experience. Thinking about buying one of the baskets that attach to the rod.

Did you marinade the bird? The marinade is crucial for the flavor IMO. It helps to get a really nice tender, moist chicken. Douse it in the Aji Verde and watch it vanish.

Yep. In fact it sat in the marinade for a full 24 hours if not a little longer. Very tasty.

I have to try spinning a picanha, the first and only time I had one I over cooked it and it was tough. These and TT cannot be anything over med-rare.
 
I'll have to look and see if I took any pics of the picanha cook. I should have posted it up but for whatever reasonI didn't. It wasn't a complete disaster, but could have been much much better.
