And another Covid cook😷
Started feeling sluggish on Thursday but thought just a summer head cold and pushed thru until Friday afternoon. Smoked 6 bars of cream cheese and 2 Bloomin Bologna Onions(they turned out perfect but no pics) for oldest daughter's baby shower yesterday and finally tested yesterday afternoon.
But on the mend and I'm now guessing that's what's been going around in my house for the last month.

But 1st I saw in the deep freeze was the last of the Kroger coupon sliced pork butt so off we went.

2 hrs in with 2 coated with MC Holy Gospel and 1 with Kosmos Q SPG.
Have my mop warming up and will start in an bit with it.

Wife preferred the Meat Church flavor over the SPG but I made that on for me anyway. Took them tender, 195 to 198 IT and cut with a fork. She made the bb and corn in the cob to finish off the plate.

Will definitely use the same process again and grill the corn next time.

I’ve just swerved into Meat Church. Nothing I don’t like so far, actually exceptional
I love them all but the family finds the Holy Cow too peppery for their tastes buds. I still use it but more sparingly on briskets for them.
Used them all in comps with great results but the most critical judges live in my house 😆.

Completely understand. The Holy Gospel and Holy Voodoo. Is what we are using. The Fajita is dang good also.

I love a good pork steak and those look great. Local Savealot has then for $1.99 / lbs. I was gonna my to grab some to grill but looks like rain and storms all week. We could sure use the rain here in Ohio so I'll take it.

Don't know if there is really a specific way to cut them off a shoulder/butt, I just slice at random on thickness preference. :emoji_thinking:
