Just joined up here to take advantage of the vast amount of info here. I don't have much knowledge smoking meat yet to contribute.
Got a master built electric smoker a couple weeks ago and am doing my second brisket on it today.
I had no idea what I was doing with the first one I cooked (every bit of it was eaten though), but I have learned a lot from that one.
 
Non2os13, welcome to SMF!  Glad you are here with the new MES and learning as you eat and go.  For some reason, when something tastes smoky delicious, even the mistakes disappear.
