I'm a software tech in Minnesota, have been smoking with a charcoal bullet for awhile and just switched to an MES - opens up winter for smoking for me, as I couldn't keep consistent heat when it was cold out. And just ordered an A-MAZE-EN pellet smoker based on what I read here. Doing a little brisket today in lovely 5-10 degree weather. Much nicer than the -15 we woke up to yesterday morning. I already appreciate all of the recipes/tips/tricks/pics throughout the forums - you guys (and gals) rock!

Thanks Mossy & Gary!  Agree - I'm mostly going thru threads soaking up info at this point.  Depending on the weather this weekend, I'm doing a bunch of cheese and hopefully a fatty - will post if the weather works out!

Thanks guys!  Enjoyed your thread/perfect stickers for the warthog btw, Smoke!  I just pick up a bunch of kinda-sorta-world-famous 2 year aged Gouda today (cheese place from my home town that has been written up in the NY Times, etc) - it's going in for a few hours of AMNPS cold-kissing Saturday  :)

Welcome to another Minnesotan!  It does get a little tricky with these cold temps (although today would have been a nice day to be outside with all the sun).  Where did you get the Gouda?  I have smoked a few cheeses, and plan on doing a lot more!
 
Thanks Jason - Got it at Eichten's on Hwy 8 just past Center City.  It's a bit NE (40mi or so) of MSP, but I grew up in Chisago and had a meeting up there today for work, so it was a nice little bonus to pick up some of their Gouda.  They have a really great cheese and sausage selection, nice little restaurant, etc.  You should be able to find them on Google.

Not advertising or trying to spam, btw - and hope it didn't come off that way.

Hey Terry - I kind of assumed you were talking about Eichten's.  It's a great shop, I agree.  I have been to their store several times after camping along the St. Croix, or canoeing.  I get their stuff from the St. Paul Farmer's market as well.
