Beat me to it Case.  I just read that in the paper this morning and was about to post it.  Apparently you have to cook it to get it to taste like bacon.

I heard they have to brine it in Pop's Brine for 14-16 days then cold smoke it over hickory for 18-24 hours to get it to taste like bacon!
 
BTW, bacon flavored seaweed is probably the only way I'd eat seaweed!
Do you eat ice cream? If so you have eaten seaweed!  There is a substance in seaweed called agar or agar-agar that is used as a thickening agent. Its actually used in all types of foods and other non food items like modeling clay. Hows that for a food science fact of the day!

Yes but in that case it tastes like ice cream!!! Actual seaweed is another story altogether!! My mom buys the seaweed crackers from costco-ugh, nasty! Or, nori is another thing I have tried several times and just can't do. Our chef in culinary school tried really hard to get me to change my mind but I have never been able to enjoy it. But then I'm not a big seafood fan in general...

Nori, a dried seaweed, is commonly used to wrap sushi.

For even more baconynes(is that even a word?), try some seitan, aka fakin' bacon, the vegetarian wheat meat alternative.

Ya I have never enjoyed sushi, part of its because of the nori. I always get the veegie rolls wrapped in the clear rice skins which I can't remember the name of for the life of me....

We did a vegetarian catering one time where they asked for grilled seitan. It smelled pretty good because it was !marinated but once you put it in your mouth...so weird. I would have to be pretty hungry to try it again!

Carrageenan is another seawood product used in ice cream among lots of other things.
